Thai Green Curried Komo Gway Clams

Ingredients

1 Lb  Komo Gway Clams, scrubbed
2 cloves garlic, sliced thin
1 stock lemon grass, cut in half and bruised (OPTIONAL)
1-2 tsp Thai green curry paste
1 tsp fish sauce (OPTIONAL)
Juice of one lime
1 can Coconut milk
1 litre Imagine Organic chicken Broth (IF sauce gets too thick)
Freshly chopped cilantro
Sea salt and pepper to taste


1) In a deep saute pan on med heat, add olive oil and saute garlic, lemon grass, curry paste until fragrant. Add fish sauce, lime juice, cilantro and coconut milk. Bring to a soft boil.
2) Add clams and steam until they open. Season with salt and pepper.
3) Garnish with freshly chopped cilantro and tarragon.
